Mozzarella with Melon Slices and Prosciutto
Ingredients
This simple recipe mixes sweet melon with salty ham for light and easy appetizer.
1 small cantaloupe or honeydew melon
8 slices prosciutto
1 (8-oz.) ball fresh mozzarella
1/4 cup flat-leaf parsley
3 Tbsp. extra virgin olive oil

directions
Halve melon, scoop out seeds and cut each half into 4 wedges and remove rind. Wrap each wedge in a slice of prosciutto and serve with sliced, fresh mozzarella and chopped flat-leaf parsley. Drizzle with extra virgin olive oil and finish with sea salt.
