Savory Cheese and Leek Pie

Ingredients

1 each 9 inch deep dish pie crust, frozen
6 tablespoons (3/4 stick) My Essentials unsalted butter
3 each leeks, white part only, chopped
1 medium shallot, diced
1 tablespoon diced garlic, or to taste
1 dash salt, to taste
1 dash freshly ground black pepper, to taste
1/2 cup Hannaford light cream
1/2 cup My Essentials half-and-half
1 1/3 cups shredded swiss cheese

Directions

1. Preheat oven to 375 degrees. Remove pie crust from freezer.
2. Melt butter in a large saucepan over medium heat. Add leeks, shallot, and garlic. Saute until soft, about 5 to 7 minutes. Add a dash of salt and pepper, to taste. Stir in cream, half and half, and cheese. Heat and stir until cheesemelts, about 1 minute. Pour into pie shell.
3. Bake until slightly browned on top, about 35 to 45 minutes. Cool on a wire rack for 20 minutes, then serve.
