Sweet and Sour Pork

Ingredients

1/2 cup Nature's Place Organic ketchup
3 tablespoons Inspirations Mango Pepper jelly
2 tablespoons quick-cooking tapioca, such as Minute Tapioca
2 tablespoons reduced-sodium soy sauce
1 tablespoon Apple cider vinegar
1 tablespoon Inspirations honey mustard
2 lbs boneless pork sirloin steaks
3 each ribs celery, sliced on the diagonal
2 each red bell peppers, chopped
3 each carrots, finely chopped
1/2 each sweet onion, chopped
1 each ( 8 oz. can) no-sugar-added Crushed pineapple, drained
1/4 cup thinly sliced Scallions, divided
Sweet and Sour Pork

Directions

1. Add ketchup, jelly, tapioca, soy sauce, vinegar, and mustard to a slow cooker and whisk until evenly blended. Add pork, celery, bell peppers, carrots, and onion. Stir until evenly mixed. Cover and cook 7 1/2 hours on low or 3 hours, 45 minutes, on high.
2. Transfer pork to a plate. Add pineapple and 2 tablespoons of the scallions to the vegetables and stir well. Return pork to the cooker. Cover and cook an additional 1/2 hour on low or 15 minutes on high.
3. To serve, divide pork and vegetables among 4 plates and garnish with remaining 2 tablespoons scallions.
