SALMON-CUCUMBER BITES

Ingredients

2 Tbsp. extra-virgin olive oil
1 Tbsp. prepared horseradish
1 Tbsp. fresh lemon juice
1/4 tsp. freshly ground black pepper
8 oz. smoked salmon, coarsely chopped (about 1 cup)
1 1/2 English cucumbers, well scrubbed, sliced into 40 1/4-inch-thick rounds
minced dill or dill sprigs for garnish (optional)
lemon zest for garnish (optional)
SALMON-CUCUMBER BITES

Directions

1. In a medium bowl, whisk together oil, horseradish, lemon juice, and pepper. Addsalmon and stir to combine, making sure all the salmon is coated with dressing.
2. Place the cucumber slices on a work surface. Top each with a teaspoonful ofsmoked salmon mixture. Sprinkle each bite with dill and lemon zest if desired.Serve on a large serving plate. If serving individual portions, place on small plates if desired and top each plate with 4 Salmon Cucumber Bites.
