Apple-Blackberry Crisp

Ingredients

vegetable cooking spray
11/3 cups all-purpose flour
11/3 cups old-fashioned oats
1 cup (light or dark) brown sugar, packed
1/4 tsp. salt
2/3 cup unsalted butter, melted
6 medium-large apples, peeled, cored, and cut into 1/3-inch-thick slices
1/3 cup sugar
1 Tbsp. cornstarch
1 Tbsp. fresh lemon juice
1 (10 oz.) pkg. frozen blackberries
black raspberry ice cream (optional)
fresh blackberries for garnish (optional)
Apple-Blackberry Crisp

Directions

1. Preheat oven to 375 degrees F. Spray a 9-by-13-inch baking pan with cooking spray.
2. In a large bowl, combine flour, oats, brown sugar, and salt. Add melted butter and stir with a fork until crumbly.
3. Add apples to the prepared pan and toss with sugar, cornstarch, and lemon juice. Gently stir in blackberries. Cover evenly with topping.
4. Bake until fruit is tender and bubbling and topping is browned and crisp, about 35 to 40 minutes. Let cool for 15 minutes. Serve warm, topped with ice cream and garnished with fresh blackberries if desired.
