Turkey, Spinach, and Pimento Cheese Pinwheels

Ingredients

4 oz. Neufchatel cream cheese, softened
2 Tbsp. mayonnaise
1 1/2 tsp. Worcestershire sauce
1 tsp. white vinegar
1/4 tsp. Dijon mustard
1/4 tsp. cayenne pepper (optional)
8 oz. shredded reduced-fat sharp cheddar cheese (2 cups)
1 (4oz.) jar pimentos, drained and minced
2 (8") whole-wheat wraps or tortillas
1 cup baby spinach
6 slices smoked deli turkey (6 oz.)
Turkey, Spinach, and Pimento Cheese Pinwheels

Directions

1. Beat together Neufchatel, mayonnaise, Worcestershire, vinegar, mustard, and cayenne (if using) until smooth. Stir in cheddar and pimentos.
2. Spread 1/3 cup cheese mixture over each wrap, leaving a 1/2" border around the edges. Cover evenly with spinach, followed by turkey.
3. Roll into tight logs, pressing lightly to seal. With seam-side down, trim ends and slice into equal pieces.
Store It: Unsliced logs can be refrigerated for up to 1 day. You will have extra pimento cheese that can be refrigerated for up to 1 week.
