Spicy Citrus Grilled Fish Taco Filling

Ingredients

Fill your favorite corn or flour tortilla with this citrusy grilled fish and serve with chopped red onion, cilantro, and lime wedges for topping. You can substitute swordfish, snapper, or halibut for the mahi mahi. In lieu of grilling, broil fish for about 8 minutes. To save time, rub the fish with the spice paste and refrigerate it for up to 2 hours before grilling.
1 Tbsp. Taste of Inspirations Cabo Chipotle Rub, plus more to taste
1 Tbsp. vegetable oil
1 Tbsp. orange juice
5 (6-oz.) skinless mahi mahi fillets

Directions

1. Stir together 1 tablespoon chipotle rub, oil, and orange juice. Pat fillets dry with paper towels and rub mixture all over fish.
2. Heat grill to medium, then clean and oil grates. Grill fillets until golden brown and centers are just cooked through, about 5 minutes per side.
3. Shred into bite-sized pieces and season with more chipotle rub to taste.
