Summer Fruit Shrub

Ingredients

Smaller fruit such as berries can be left whole.
1 lb. fresh fruit (such as raspberries, strawberries, or peaches)
1 cup sugar
1 cup red or white wine vinegar

Directions

1. Lightly mash fruit and sugar together in a large bowl. Cover and refrigerate until mixture becomes very juicy and most of the sugar dissolves into a syrup, anywhere from 8 hours to 2 days.
2. Add vinegar to bowl and whisk until sugar is dissolved. Strain, bottle, and refrigerate for up to 6 months.
