Ingredients

This classic Acadian condiment adds a salty zip to omelets, marinades, and soups.
3 cups fine herbs (such as parsley, basil, chives, or chervil)
1/2 cup kosher salt, plus extra for topping
1 tbsp. lemon zest

Directions

1. In a medium bowl, toss herbs, salt, and lemon zest until combined. Sprinkle a thin layer of salt into a sterilized pint jar, add herb mixture, and top with another thin layer of salt.
2. Cover jar and refrigerate for 2 weeks. Drain liquid before using and refrigerate for up to 6 months.
