Apple Butter

Ingredients

A blend of tart and sweet apples, such as Gala and McIntosh, works well here. You can substitute water for the apple cider. This apple butter will keep in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.
5 lb. apples, cored and chopped
1 cup apple cider
1/2 cup packed brown sugar, plus more to taste
2 Tbsp. apple cider vinegar
1/4 tsp. salt

Directions

1. Combine all ingredients in a 6-quart slow cooker, cover, and cook on low until apples are soft and break apart easily when pressed with a spoon, 8 to 10 hours. Using an immersion (or traditional) blender, puree until smooth.
2. Turn slow cooker to high, partially cover with lid, and cook, stirring occasionally, until mixture is thick and spreadable, 2 to 4 hours. Add more sugar to taste and let cool completely before storing in an airtight container.
