Slow-Cooker Chicken Tikka Masala

Ingredients

Using low-fat Neufchatel in place of heavy cream lightens up this dish without skimping on flavor. You can find garam masala in the spice aisle. Serve with basmati rice or naan bread.
2 lb. boneless skinless chicken breasts or thighs, trimmed and cut into 1" pieces
1 (28-oz.) can crushed tomatoes
1 Tbsp. garam masala
2 tsp. ground turmeric
Pinch cayenne pepper
Salt and pepper
1 onion, minced
1 Tbsp. minced fresh ginger
3 garlic cloves, minced
4 oz. Neufchatel cheese, cut into 1" pieces
1/4 cup chopped fresh cilantro
Slow-Cooker Chicken Tikka Masala

Directions

1. Combine chicken, tomatoes, garam masala, turmeric, cayenne, 1 teaspoon salt, 1/2 teaspoon pepper, onion, ginger, and garlic in a slow cooker. Cover and cook on low for 8 hours.
2. Ladle about 1 cup sauce from the slow cooker into a medium bowl, add Neufchatel, and whisk until smooth. Pour sauce back into slow cooker, add cilantro, and stir gently to combine. Season with salt and pepper to taste before serving.
