Orange-Dijon Vinaigrette

Ingredients

You will need to budget in 20 minutes of cooling time for this recipe. While freshly squeezed orange juice will give this dressing a brighter flavor, store-bought works as well.
1 cup freshly squeezed orange juice (from about 3 oranges)
1 Tbsp. white wine vinegar
1 Tbsp. minced shallot
1 Tbsp. Dijon mustard
1 Tbsp. extra-virgin olive oil
1 tsp. mayonnaise
1 tsp. minced fresh tarragon
Salt and pepper
Orange-Dijon Vinaigrette

Directions

1. Bring orange juice to a simmer in a small saucepan over medium-high heat. Reduce heat to medium and continue to simmer until juice is thickened and reduced to 1/2 cup, about 15 minutes. Transfer to a bowl and refrigerate until cool, about 15 minutes.
2. Whisk in remaining ingredients until well combined and season with salt and pepper to taste. Transfer to a jar and refrigerate for up to 5 days.
