Roasted Red Snapper with Herbs and Chipotle Sauce

Ingredients

1 whole red snapper, gutted, scales and gills removed
2 Tbsp. Goya Extra Virgin Olive Oil
1 lemon, sliced thin
2 sprigs fresh dill
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1 cup mayonnaise
1 small Goya Chipotle Pepper in Adobo Sauce, minced (about 2 tsp.) or to taste
2 tsp. fresh lime juice
Roasted Red Snapper with Herbs and Chipotle Sauce

Directions

1. Preheat oven to 425 degrees. Line a roasting pan with parchment paper.
2. Rub the cleaned fish with olive oil; place the sliced lemons and dill into the cavity of the fish. Sprinkle the entire fish with salt and pepper.
3. Roast in preheated oven for 20-25 minutes or until the flesh is opaque and lifts easily away from the bones when tested with a knife.
4. For the chipotle sauce: Combine mayonnaise, chipotle pepper and lime juice in a small bowl.
