Lentil Chili

Ingredients

Chili doesn't get any easier than this! Enjoy this dish with your favorite cornbread or a crisp, light side salad.
2 Tbsp. canola oil
1 med. onion, chopped
4 garlic cloves, minced
1 cup lentils
1 cup bulgur
3 cups low-fat, low-sodium chicken broth or vegetable broth
2 cups canned diced tomatoes
2 Tbsp. chili powder
1 Tbsp. cumin

Directions

1. Heat the oil in a large, heavy-bottomed pot over medium-high heat. Add the onions and garlic and saute until soft (5-6 minutes).
2. Stir in the remaining ingredients and bring to a boil. Simmer until lentils are tender (30-40 minutes).
