Ingredients

Make a few extra lentils when you're making dinner and set some aside to turn into this super easy lunch salad the next days. A lot of flavor in this dish will come down to which lentils you choose and how you cook them... would work very nicely, so increase the lentils and stock by about 30%.
1 1/3 cup cooked lentils
4 celery stalks, thinly sliced
6 oz. baby spinach, chopped
2 Tbsp. olive oil
3 Tbsp. lemon juice
Pinch thyme
Pepper to taste

Directions

1. Combine lentils, celery, and spinach.
2. Toss with oil, lemon juice, and seasonings to serve.
