Roasted Plum Tomatoes

Ingredients

The simple delights of garlic, tomatoes, and good olive oil are brought together gently by a slow roasting process to deepen and meld the flavors.
2 lbs. plum tomatoes, halved and cored
3 cloves garlic, minced
1 Tbsp. olive oil

Directions

1. Preheat oven to 275 degrees F. Place tomatoes cut-side up on a shallow baking pan. Drizzle with oil and sprinkle garlic over tomatoes.
2. Bake, uncovered, until soft (2 hours).
