Chicken & Sweet Potato Stew

Ingredients

Chicken, sweet potatoes, rosemary, and garlic...is your mouth watering yet? It should be. With the help of your trusty slow cooker, this rich, hearty stew could not be easier.
6 skinless chicken thighs
2 lbs. sweet potatoes, peeled and cut into spears
1/2 lb. mushrooms, sliced
6 shallots, peeled and halved
4 cloves garlic, peeled
1 cup dry white wine
2 tsp. chopped fresh rosemary
1 tsp. salt
1/2 tsp. pepper
1 1/2 Tbsp. white wine vinegar
Chicken & Sweet Potato Stew

Directions

1. Stir everything but vinegar into a large slow cooker.
2. Cover and cook on low until chicken is cooked and potatoes are tender (5-6 hours).
3. Stir in vinegar and serve hot.
