Ingredients

Sprinkling vinegar on the hot potatoes adds that extra zip to the salad without adding any extra calories from a dressing. Although this dressing is quite lean, it's still got zip from the dijon mustard. You'reĀ gonna love it.
1 1/2 lbs. red potatoes, cubed
1 tsp. salt
1 1/2 tsp. sherry or white-wine vinegar
Pepper to taste
1/4 cup non-fat plain yogurt
2 Tbsp. mayonnaise
1 Tbsp. Dijon mustard
1/3 cup chopped celery
1/4 cup chopped scallions
1 Tbsp. chopped fresh parsley
1 Tbsp. chopped fresh dill (optional)

3. Whisk together yogurt, mayonnaise and mustard in a small bowl.
4. Add the yogurt mix to the reserved potatoes along with celery, scallions, parsley, and dill, stirring gently to combine.
