Jerk Turkey Burgers

Ingredients

1/3 cup couscous
1/2 cup boiling water
2 tsp. canola oil
1/2 cup chopped red bell pepper
2 cloves garlic, minced
1 tsp. thyme
1 tsp. curry powder
1/2 tsp. cumin
1/2 tsp. allspice
1/2tsp. ginger
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1/8 tsp. cayenne pepper
12 oz. lean ground turkey
4 whole-wheat hamburger buns
4 tomato slices
4 lettuce leaves

Directions

1. Combine couscous and water. Let stand until tender (5-10 minutes).
2. Heat oil in a small skillet over low heat. Add bell pepper, garlic, herbs, and spices. Cook, stirring, until the bell pepper is slightly softened (1-2 minutes).
3. Prepare a grill or preheat the broiler to high.
4. Mix turkey, couscous, and bell pepper thoroughly. Shape into four 3/4" thickĀ patties. Grill or broil the patties, turning once, until they reach a minimum internal temperature of 165 degrees F (5 minutes per side).
5. Build burgers on buns with tomato and lettuce.
