Broccoli Chicken Frittata

Ingredients

This meal can be served as a brunch or a supper. Either way, it's delicious!
1 cup broccoli florets
1/2 cup chopped, cooked chicken breast
1/4 cup chopped plum tomato
1/2 medium onion, finely chopped
1/2 tsp. Italian seasoning
1/8 tsp. salt
1 cup egg substitute
Broccoli Chicken Frittata

Directions

1. Spray oven-safe medium skillet with cooking spray and heat on medium. Add broccoli, chicken, tomato, onion, Italian seasoning, and salt. Cook until broccoli is just tender (3-4 minutes).
2. Add egg substitute. Reduce heat to low and cover. Cook until bottom of frittata is set but top is still slightly moist (8-9 minutes).
3. Broil on high with rack in the highest position until top is set (2-3 minutes).
