Good-Morning Banana Nut Cereal

Ingredients

If you get bored of the same old routine in your breakfast, mixing up your grains is an excellent way to play with the flavor and texture of hot cereal. Oat bran adds creaminess and quinoa provides crunch to surround the more traditional oatmeal for a pleasantly balanced dish.
1/4 cup water
1/4 cup skim milk
1 Tbsp. quinoa
1/2 banana, sliced
1 1/2 Tbsp. rolled oats
1 Tbsp. oat bran
1/8 tsp. salt
1 pinch cinnamon
1 Tbsp. chopped walnuts
1 tsp. brown sugar
1/4 tsp. vanilla extract

Directions

1. Stir the water, milk, and quinoa together in a saucepan. Bring to a gentle boil. Reduce heat to low and simmer until the quinoa begins to soften (5 minutes).
2. Stir in the banana, rolled oats, oat bran, salt, and cinnamon. Cook over low heat, stirring frequently, until the mixture thickens (4-5 minutes).
3. Stir in the walnuts, brown sugar, and vanilla to serve.
