Roasted Brussels Sprouts With Pistachio & Shallot

Ingredients

This dish will win over even those who don't think they like Brussels sprouts, and with a boost of protein from the pistachios, the leftovers makes a great snack...assuming there are any leftovers.Tip: For a little extra sweetness, saute the shallots lightly in part of the olive oil before roasting them with the Brussels sprouts.
3 cups halved Brussels sprouts
1 cup sliced shallots
1/2 cup pistachios
1/2 tsp. pepper
1/2 tsp. salt
3 Tbsp. olive oil
Pinch of chili flakes (optional)
3 Tbsp. sherry
Roasted Brussels Sprouts With Pistachio & Shallot

Directions

1. Preheat oven to 350 degrees F.
2. Toss all ingredients together. Spread evenly on a baking sheet and roast, shaking halfway through, until brown and tender (30-35 minutes).
