Pumpkin Pancakes

Ingredients

Bring pumpkin to the breakfast table in the form of these deliciously spiced pancakes. Play with the spice mixture to suit your taste and serve with a tablespoon of natural nut butter for a protein boost.
2 tablespoons canned pumpkin
1/2 of a medium banana
3 tablespoons whole wheat flour
1 tablespoon ground flaxseed
Dash cinnamon
Dash nutmeg

Directions

1. Combine all ingredients in a food processor until smooth.
2. Heat pan over medium heat; coat with non-stick cooking spray and pour batter onto the pan/griddle.
3. Cook each pancake for 2-3 minutes and then flip. Cook on the other side for about 1 minute.
