2 pounds carrots
2 mandarin oranges, peeled and segmented
Juice from 1 orange
2 tablespoons olive oil
1/8 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon rosemary

Directions

1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.2. Toss carrot slices with juice, mandarin segments, oil, salt, pepper and rosemary.3. Bake for 25-30 minutes, until carrots are tender.
