Ingredients

4 T. olive oil
1 1/2 c. onion, minced
1 T. garlic, minced
1 T. brown sugar
1 t. kosher salt
1 t. garam masala
2 t. ginger
1/2 t. coriander
1/2 t. cinnamon
1/2 t. mustard seeds
2 c. tomatoes, chopped
1/2 c. low-sodium vegetable stock
1 1/2 lbs. green beans, trimmed
Green Beans in Spiced Tomato Sauce

Directions

1. Warm oil over medium-high heat in a large pot. Stir in the onion and cook until tender, 5 minutes. Stir in garlic, sugar, salt, garam masala, ginger, coriander, cinnamon, and mustard seed. Cook until seeds pop, 1 minute.
2. Stir in the tomatoes and stock. Bring to a simmer and add beans. Reduce the heat to low, cover, and simmer until beans are cooked.
