2 cucumbers, sliced into 1" circles
1/4 cup shredded carrots
1/2 cup feta cheese
1 cup roasted red pepper hummus

Directions

1. Scoop out most of the seeds in each cucumber slice.
2. Place about 1 tablespoon of hummus into each bite.
3. Sprinkle each bite with carrots and cheese. Serve immediately.
