Grainless Garbanzo Tabbouleh

Ingredients

This recipe comes to us from our own in-house chef, Dorene Mills, and chef Kerry Altiero.
1 can Hannaford Garbanzo Beans, low sodium
1/2 jar Taste of Inspirations® Mediterranean Olive Mix
1/2 cup Mezetta® Roasted Bell Peppers, chopped, plus 1 Tbsp. liquid from jar
1 1/2 cups fresh parsley, chopped
1 fresh lemon
Ground pepper, to taste
Grainless Garbanzo Tabbouleh

Directions

1. Open the can of garbanzo beans, drain and rinse. Then, add to a medium bowl.
2. Roughly chop 1/2 the jar of Mediterranean olives and add to bowl.
3. Add chopped red peppers to bowl, along with 1 Tbsp. of the liquid from the jar.
4. Add chopped parsley to mixture and toss well to blend. Juice the lemon and add it to the mixture. Season with pepper and set aside in fridge to chill until ready to serve.
