Orange-Chipotle Glazed Ham

Ingredients

If your ham has skin, trim off with a sharp knife before scoring, leaving about 1/4" of fat. You can use either a shank- or butt-end ham for this recipe.
1 (10-lb.) fully cooked, smoked, bone-in ham
4 cups orange juice
1 cup water
1/2 cup honey
2 tsp. ground chipotle powder
1 tsp. garlic powder
1 Tbsp. lime zest, from 2 limes

Directions

1. Place a rack in lower-middle of oven and heat to 325 degrees. Coat a roasting pan with cooking spray and set aside.
2. Using a short knife, score a shallow cross-hatch into ham's fat layer, then place ham in prepared roasting pan; pour 2 cups orange juice over top. Add water to roasting pan, then transfer to oven and roast 45 minutes.
3. Baste ham with pan juices, return to oven, and continue roasting 1 more hour, basting every 20 minutes. Meanwhile, combine remaining 2 cups orange juice, the honey, chipotle powder, and garlic powder in a medium saucepan and bring to a boil over medium-high heat. Cook, stirring occasionally, until mixture is thickened and syrupy, 15 to 20 minutes.
4. Brush half of glaze over top of roasted ham, then return to oven and roast 15 minutes. Transfer 3 tablespoons glaze to a small bowl, stir in lime zest, and set aside. Brush ham with remaining 1/4 cup glaze and roast 15 more minutes. Remove ham from oven, brush with reserved glaze, and let sit 15 to 20 minutes before slicing and serving.
