Tomato and Watermelon Salad with Feta

Ingredients

4 tomatoes, cored and cut into wedges
4 cups cubed watermelon (about 1 1/2 lb.)
1/3 cup balsamic vinaigrette
Salt and pepper
5 oz. baby arugula (about 5 lightly packed cups)
1 cup crumbled feta cheese
3 Tbsp. chopped fresh mint
Tomato and Watermelon Salad with Feta

Directions

1. Combine tomatoes and watermelon in a large bowl and drizzle with vinaigrette; season with salt and pepper to taste, then toss until evenly coated.
2. Gently fold in arugula, then sprinkle with feta and mint and serve.
