Autumn Slaw with Pecans and Cherries

Ingredients

Dressed slaw can be refrigerated, covered, for up to two days before serving.
1/2 cup apple cider vinegar
1 Tbsp. whole-grain mustard
1 Tbsp. sugar
1/2 tsp. salt
1/2 tsp. ground black pepper
1/4 cup vegetable oil
1/2 head red or green cabbage, cored and very thinly sliced
1 large Granny Smith apple, cored and cut into matchsticks
1/2 small red onion, very thinly sliced
1 cup pecans, toasted and coarsely chopped
1/2 cup dried cherries or cranberries

Directions

1. In a large bowl, whisk vinegar, mustard, sugar, salt, and pepper until sugar is dissolved. While whisking, slowly drizzle in oil until well combined.
2. Add remaining ingredients and toss well to coat. Let sit at room temperature at least 10 minutes before serving.
