Mashed Sweet Potatoes with Garlic and Soy Sauce

Ingredients

6 large sweet potatoes, peeled and cut into 2" pieces
Salt and pepper
2/3 cup milk or half-and-half
4 Tbsp. unsalted butter, cut into 4 pieces
2 1/2 Tbsp. reduced-sodium soy sauce
1 Tbsp. maple syrup
2 garlic cloves, grated
2 scallions, thinly sliced, plus more for garnish
Mashed Sweet Potatoes with Garlic and Soy Sauce

Directions

1. Place potatoes in a large pot and add enough cold water to cover by 2", then season generously with salt. Bring to a boil over medium-high, then reduce heat to medium and cook until potatoes are very tender, 20 to 30 minutes.
2. Drain potatoes, then return to pot and mash until smooth. Stir in milk, butter, soy sauce, maple syrup, garlic, and scallions and season with salt and pepper to taste. Sprinkle with more scallions just before serving.
