Mocha-Nut Ice Cream Sandwiches

Ingredients

These ice cream sandwiches require at least 1 hour of freezing time.
10 Nature's Promise Crispy Brownie Cookies
2 1/2 cups coffee ice cream, softened
1 cup semisweet chocolate chips
1/2 cup roasted and salted almonds, finely chopped
Mocha-Nut Ice Cream Sandwiches

Directions

1. Arrange cookies on a parchment-lined baking sheet with flat sides facing up. Top five cookies with a scoop of softened ice cream (about 1/2 cup each), then top with remaining cookies and press gently to spread ice cream to edges. Smooth edges with a butter knife, filling in gaps with more ice cream as needed, then freeze until solid, about 1 hour.
2. Before removing sandwiches from freezer, microwave chocolate chips in a small heatproof bowl at 50% power until melted, 1 to 2 minutes, stirring every 30 seconds. Working with one sandwich at a time, dip in melted chocolate to coat about half of each cookie, then immediately sprinkle with nuts (chocolate will harden very quickly on frozen sandwiches).
3. Serve immediately or wrap individually in parchment and freeze for up to 1 month.
