Betty's Coconut Shrimp Ceviche

Ingredients

16-20 peeled & deveined shrimp (remove tails)
3 packets (3 tsp separated) of Goya Sazon
1 can Nature's Promise coconut milk (13.5oz)
3 tbsp. of lemon juice
3 tbsp. of hot sauce
1/2 red bell pepper (finely chopped) and 1/4 red onion (finely chopped)
2 jalapeno peppers (seeded & finely chopped)
1 tsp. garlic or 2 cloves (chopped or minced)
1 tsp. cilantro (finely chopped)
2 tbsps. Of whole cilantro leaves
Betty's Coconut Shrimp Ceviche

Directions

1. Bring 6 cups of water to boil and add 2 packets of Sazon powder to taste. Turn off heat and put shrimp into water until shrimp turns pink, about two minutes.
2.Drain shrimp and refrigerate for 1/2 hour.
3.In a large bowl, stir together coconut milk, lemon juice, hot sauce and 1 packet of Sazon. Reserve a little Sazon powder to sprinkle over the top at the end for more flavor.
4. Add the red bell peppers, red onion, jalapeno, garlic and chopped cilantro to the bowl.
5. Add chilled shrimp, mix, chill for 30 minutes, and then garnish with cilantro before serving. Enjoy!
