Spiced Pumpkin Bread

Ingredients

You can substitute 2 tablespoons pumpkin pie spice for the individual spices. A flour-based cooking spray can be used in place of the butter and flour in step 1.
Melted butter, for pans
4 cups (17 oz.) all-purpose flour, plus more for pans
4 cups sugar
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground cloves
1 1/2 tsp. ground ginger
1 1/2 tsp. ground nutmeg
1 tsp. table salt
5 large eggs
1 (24-oz.) can pumpkin puree
1 1/2 cups vegetable oil
1/2 cup water

Directions

1. Center a rack in oven and heat to 350 degrees. Generously butter and flour two 5x9" loaf pans.
2. In a medium bowl, whisk flour, sugar, baking soda, spices, and salt. In a large bowl, whisk eggs, pumpkin puree, oil, and water until well blended.
3. Working with 1 cup at a time, add dry ingredients to wet ingredients and stir until batter is smooth and no dry flour remains. Divide batter between prepared pans and smooth tops with a rubber spatula.
4. Bake until loaves are browned and a toothpick inserted into center of each comes out clean, about 1 1/2 hours. Transfer pans to a wire rack and let sit 10 minutes. Carefully tip loaves out of pans and let cool completely on rack.
