Vegetarian Cobb with Coconut Bacon

Ingredients

Be sure to use large coconut flakes - not fine shreds - for the coconut bacon.
1 Tbsp. reduced-sodium soy sauce
1 Tbsp. maple syrup
2 tsp. olive oil
1 tsp. smoked paprika
1/2 tsp. liquid smoke (optional)
1/4 tsp. garlic powder
1 cup large unsweetened coconut flakes
8 cups coarsely chopped romaine lettuce (about 1 1/2 heads)
1/4 cup Taste of Inspirations French Vinaigrette, divided
1 1/2 cups halved grape tomatoes
2 hard-boiled eggs, peeled and quartered
1 avocado, peeled and sliced
1/2 English cucumber, chopped
1/4 small red onion, thinly sliced
1/4 cup Taste of Inspirations Crumbled Blue Cheese

Directions

1. Center a rack in oven and heat to 350 degrees. Line a rimmed baking sheet with parchment.
2. Whisk soy sauce, maple syrup, oil, smoked paprika, liquid smoke (if using), and garlic powder in a large bowl until blended. Add coconut and toss gently to coat, then spread into an even layer on prepared baking sheet. Bake until browned, 8 to 10 minutes, tossing gently halfway through. Stir to separate any pieces that may be stuck together, then let cool completely on baking sheet.
3. Toss lettuce and 2 tablespoons dressing in a large bowl, then arrange on a large platter. Top with coconut bacon and remaining ingredients, then drizzle with remaining 2 tablespoons dressing and serve.
