Grilled Pork Chops with Rice Salad

Ingredients

4 Nature's Promise Boneless Pork Chops
1/4 cup plus 2 Tbsp. Taste of Inspirations Greek Dressing, divided
Salt and pepper
1 Tbsp. water
3 cups cooked white rice
3 cups Hannaford Baby Spinach, coarsely chopped
1/2 cup finely chopped English cucumber
1/2 cup finely chopped fresh mango
1/2 cup Hannaford Diced Red Onions
1/3 cup Taste of Inspirations Reduced Fat Crumbled Feta Cheese
2 tsp. Taste of Inspirations Chili Limon Seasoning
Grilled Pork Chops with Rice Salad

Directions

1. Heat grill to medium-high, then clean and oil grates. Coat pork chops with 2 tablespoons dressing and season with salt and pepper. Set aside to marinate while grill heats.
2. Meanwhile, combine remaining 1/4 cup dressing and the water in a large bowl and whisk until blended. Add rice, spinach, cucumber, mango, onion, feta, and seasoning and toss to combine.
3. Place pork on grill and cook, flipping once, until browned and cooked through, 5 to 7 minutes per side. Transfer pork to a plate and cover loosely with foil. Let rest 5 minutes, then divide chops and rice among plates and serve.
