Ingredients

This recipe requires at least 4 hours of marinating time.
3 lb. flanken beef short ribs
1 yellow onion, chopped
1/2 Asian pear, cored and chopped
6 garlic cloves, smashed
1/2 cup cola
2 1/2 Tbsp. brown sugar
2 1/2 Tbsp. reduced-sodium soy sauce
2 Tbsp. toasted sesame oil
1 1/2 tsp. salt
3/4 tsp. pepper
Sesame seeds and sliced green onions, for serving
Kalbi (Korean-Style Marinated Short Ribs)

Directions

1. Rinse ribs under cold water to remove any bits of bone. Place in a large baking dish or resealable bag.
2. Process onion, pear, and garlic in a food processor or blender until finely chopped, about 30 seconds. Add remaining ingredients and process until mostly smooth. Pour marinade over ribs and toss gently to coat. Cover and refrigerate, turning occasionally, at least 4 hours and up to 2 days.
3. When ready to cook, heat grill to medium-high, then clean and oil grates. Remove ribs from refrigerator and let sit at room temperature while grill heats.
4. Arrange ribs on grill and cook, covered, until well browned and cooked through but still juicy, 3 to 4 minutes per side. (Alternatively, pan fry ribs in batches over medium heat until well browned, adding 1/4 cup water as needed to keep marinade from burning.)
5. Transfer ribs to a platter and sprinkle with sesame seeds and green onions before serving.
