Pork Tacos with Fresh Mango Salsa

Ingredients

1 cup halved grape tomatoes
1/2 cup finely chopped fresh mango
2 Tbsp. Hannaford Diced Red Onions
2 tsp. Taste of Inspirations Chili Limon Seasoning, divided
Salt and pepper
1 Tbsp. vegetable oil
2 Nature's Promise Boneless Pork Chops, cut into 1/2" pieces
1 (15-oz.) can Nature's Promise Organic Spicy Black Beans, drained (do not rinse)
12 Hannaford Taco Size Yellow Corn Tortillas, warmed
1 avocado, peeled and sliced
1/3 cup Taste of Inspirations Reduced Fat Crumbled Feta Cheese
Pork Tacos with Fresh Mango Salsa

Directions

1. In a small bowl, combine tomatoes, mango, onions, and 1 teaspoon seasoning. Season with salt and pepper to taste and set aside.
2. Heat oil in a medium nonstick skillet over medium-high until shimmering. Add pork and remaining 1 teaspoon seasoning and cook, stirring occasionally, until pork begins to brown, about 2 minutes.
3. Stir in beans and reduce heat to medium-low. Cook, stirring and lightly mashing beans occasionally, until mixture is hot. Season with salt and pepper to taste, then divide pork mixture among tortillas and top with mango salsa, avocado, and feta.
