Hamburger Cookies

Ingredients

1 cup Hannaford Sweetened Coconut Flakes
Yellow and green food coloring
1 cup vanilla or buttercream frosting
1 box Hannaford Vanilla Wafers
1 box Hannaford Fudge Covered Mint Cookies
1 Tbsp. water, plus more as needed
2 tsp. sesame seeds
Hannaford Potato Sticks, for serving

Directions

1. Combine coconut with six drops green food coloring and two drops yellow food coloring in a resealable plastic bag, then seal and shake until coconut is tinted light green. Transfer to a plate and set aside. In a small bowl, combine frosting with eight drops yellow food coloring and stir well, adding more food coloring as needed to achieve a mustard-like color.
2. To assemble, spread a layer of frosting over the flat side of one vanilla wafer, then set a fudge cookie on top. Add a small dab of frosting to center of fudge cookie and set aside. Spread a thin layer of frosting onto the flat side of a second wafer, then dip into coconut and press gently to adhere. Set wafer (coconut side down) onto fudge cookie and press gently. Repeat with remaining cookies, frosting, and coconut.
3. Brush center of top wafers lightly with water, then sprinkle with sesame seeds. Serve with potato sticks.
