Cajun Shrimp Skillet

Ingredients

Look for refrigerated Alfredo sauce near the deli.
2 Tbsp. olive oil, divided
1 (12-oz.) package Nature's Promise Fresh Vegetables Fajita Blend
1 tsp. Cajun seasoning, divided, plus more to taste
1 lb. medium shrimp (41 to 50 per lb.), peeled and deveined
1 (10-oz.) container Taste of Inspirations Alfredo Sauce
Salt and pepper
4 cups cooked white rice, for serving
1/4 cup sliced green onions, for serving
Cajun Shrimp Skillet

Directions

1. Heat 1 tablespoon oil in a large skillet over medium-high until shimmering. Add vegetables and 1/2 teaspoon Cajun seasoning. Cook, stirring frequently, until onions are lightly browned and peppers are tender, 10 to 12 minutes. Transfer to a plate and set aside.
2. Add remaining 1 tablespoon oil to skillet, then add shrimp and remaining 1/2 teaspoon seasoning. Cook, stirring occasionally, until shrimp are pink and opaque, 2 to 3 minutes.
3. Reduce heat to medium, add Alfredo sauce, and bring to a simmer, stirring constantly. Stir in peppers and onions, then remove skillet from heat. Season to taste with salt, pepper, and more Cajun seasoning.
4. Divide rice among bowls, then top with shrimp mixture and sprinkle with green onions before serving.
