Chicken Maciel

Ingredients

As broiling times can vary, keep an eye on the dish in step 4 to ensure the top doesn't burn.
2 cups plain nonfat yogurt
1 Tbsp. cornstarch
3 Tbsp. extra-virgin olive oil
2 Tbsp. unsalted butter or margarine
1 Tbsp. curry powder
2 tsp. paprika
2 large, cooked chicken breasts, skin and bones removed, meat cut into large chunks
2 cups cooked white rice
Salt and pepper
1 1/2 cups shredded Swiss cheese (about 6 oz.)

Directions

1. Place a rack in upper-middle of oven and heat broiler to high. In a small bowl, whisk yogurt with cornstarch, then set aside.
2. Combine oil and butter in a large skillet over low heat. When butter is melted, stir in curry powder and paprika, then increase heat to medium. Add chicken and rice and cook, stirring frequently, until heated through and well coated in spices, about 5 minutes.
3. Add yogurt mixture and cook, stirring, until sauce is bubbling and thickened, about 5 minutes. Season with salt and pepper to taste.
4. Transfer mixture to a 2-quart broiler-safe baking dish and sprinkle cheese over top. Broil until lightly browned, about 2 minutes.
