Weeknight Steak Dinner

Ingredients

Look for flavored butter pucks (available in combos like garlic-herb and Worcestershire-chive) at the seafood counter.
1 1/2 lb. baby potatoes, scrubbed and halved
3 Tbsp. olive oil, divided
1/2 tsp. steak seasoning, divided
Salt and pepper
1 lb. asparagus, ends trimmed
1 red onion, thinly sliced
1 1/2 lb. boneless sirloin steak
1 Tbsp. vegetable oil
2 flavored butter pucks (optional)

Directions

1. Center a rack in oven and heat to 400 degrees.
2. In a large bowl, toss potatoes with 2 tablespoons olive oil, 1/4 teaspoon steak seasoning, and 1/4 teaspoon salt. Spread on a baking sheet, cut sides facing up, and bake 20 minutes (reserve bowl).
3. Meanwhile, toss asparagus, onion, and remaining 1 tablespoon olive oil in reserved bowl and season with salt and pepper. Remove baking sheet from oven, push potatoes to edges, then arrange asparagus and onion in center. Return to oven and bake until vegetables are tender, about 15 minutes.
4. Meanwhile, season steak with 1/2 teaspoon salt and remaining 1/4 teaspoon steak seasoning. Heat vegetable oil in a large skillet over medium-high until just smoking. Add steak and sear, flipping once, until cooked to desired doneness, 3 to 4 minutes per side for medium-rare.
5. Transfer steak to a cutting board, top with butter pucks (if using), and let rest 5 minutes. Slice steak against the grain and serve alongside vegetables.
