Creamy Chipotle Gnocchi with Chicken and Broccoli

Ingredients

Salt and pepper
1 (16-oz.) package Taste of Inspirations Potato Gnocchi
1 Tbsp. olive oil
1 1/2 cups coarsely chopped broccoli florets
1/2 cup sliced red onion
1 Tbsp. all-purpose flour
1 1/4 tsp. Taste of Inspirations Cabo Chipotle Rub, plus more to taste
1 cup water
1 1/2 cups shredded rotisserie chicken
3/4 cup shredded sharp cheddar cheese
1/4 cup light sour cream
Creamy Chipotle Gnocchi with Chicken and Broccoli

Directions

1. Bring a large pot of salted water to a boil and cook gnocchi according to package instructions.
2. Meanwhile, heat oil in a medium nonstick skillet over medium until shimmering. Add broccoli and onion and cook, stirring occasionally, until broccoli is nearly tender, 8 to 10 minutes. Stir in flour and chipotle rub and cook, stirring constantly, 1 minute.
3. Whisk in water and cook until mixture is thickened, about 2 minutes; remove from heat. Fold in gnocchi, chicken, cheese, and sour cream, and season with salt and pepper to taste.
