Quick Butter Chicken

Ingredients

2 1/2 cups long-grain instant brown rice
1 Tbsp. vegetable oil
6 oz. white mushrooms, stemmed and quartered
1/2 cup chopped red onion
1 (15-oz.) jar Taste of Inspirations Butter Chicken Simmer Sauce
2 1/2 cups shredded rotisserie chicken
1/4 cup chopped fresh cilantro, plus more for serving
8 oz. broccoli florets, steamed, for serving
Lime wedges and light sour cream, for serving
Quick Butter Chicken

Directions

1. Prepare rice according to package instructions.
2. Meanwhile, heat oil in a large nonstick skillet over medium-high until shimmering. Add mushrooms and onion and cook, stirring occasionally, until softened and lightly browned, 5 to 7 minutes.
3. Stir in sauce and bring to a simmer. Gently fold in chicken and cook until just heated through, about 2 more minutes, then remove skillet from heat and stir in cilantro. Divide rice, chicken mixture, and broccoli among plates and serve with sour cream, lime wedges, and more cilantro.
