Roasted Strawberries with Maple and Vanilla

Ingredients

You can use 1 teaspoon vanilla bean paste or the scraped seeds from half a vanilla bean pod in place of extract, but add it with the maple syrup in step 2.
2 lb. fresh strawberries, hulled and halved
1/4 cup maple syrup
1/4 tsp. freshly ground black pepper (optional)
1/2 tsp. vanilla extract
Roasted Strawberries with Maple and Vanilla

Directions

1. Heat oven to 425 degrees with a rack in middle position.
2. Combine strawberries, maple syrup, and pepper (if using) in a 9x13" baking dish. Toss well to coat, then spread into an even layer.
3. Roast until berries are fork-tender and juices have thickened slightly, about 15 minutes, stirring halfway through. Gently stir in vanilla and serve warm.
