Lobster Salad with Green Goddess Dressing

Ingredients

This fresh, crunchy, and creamy lobster salad is the best way to beat the summer heat. Served with an herby green goddess dressing, it is light, refreshing, and full of flavor.
1/4 cup nonfat Greek yogurt
1/4 cup mayonnaise
1/2 cup chopped parsley
1/2 cup chopped basil
1 Tbsp. chopped green onions
1/2 lemon, juiced and zested
1 clove garlic
1 Tbsp. olive oil
1 lb. cooked lobster meat (about 3 to 4 whole lobsters)
1 avocado
1/2 cup chopped celery
1 (5-oz.) package spring mix
1/4 cup chopped chives
Lobster Salad with Green Goddess Dressing

Directions

In a food processor, combine yogurt, mayonnaise, parsley, basil, green onions, lemon juice, half of lemon zest, garlic, and oil. Season with salt and pepper. Pulse until combined and smooth. Season to taste.
Chop lobster meat into bite-size pieces. Pit, peel, and thinly slice avocado. In a large bowl, combine lobster meat, celery, and 1/4 cup green goddess dressing. Season with salt and pepper and mix to combine.
On a large platter, arrange spring mix. Top with lobster and avocado slices. Garnish with chopped chives and drizzle with remaining green goddess dressing.
