Skillet Chicken with Cranberries

Ingredients

Cranberries aren't just for the holidays! Cook up tart and tangy berries in the same pan as chicken thighs for a simple, savory sauce.
4 large bone-in, skin-on chicken thighs (about 1 1/2 lbs.)
2 Tbsp. canola oil
1 small onion, finely chopped
1 1/2 cups fresh cranberries
3 Tbsp. packed light brown sugar
1/2 tsp. dried oregano
2 Tbsp. finely chopped parsley
Skillet Chicken with Cranberries

Directions

Preheat oven to 400 degrees F. Season chicken with salt and pepper. In an oven-safe 12" skillet, heat oil on medium-high. Add chicken skin-side down and cook until skin is golden brown, 5 to 6 minutes. Transfer chicken to a plate, skin-side up. Reduce heat to medium.
To same skillet, add onion. Cook until golden, 4 to 5 minutes, stirring often. Add cranberries, brown sugar, oregano, and 1/3 cup water. Season with salt and pepper. Cook 2 minutes, stirring and scraping up any browned bits. Return chicken to skillet, skin-side up.
Transfer skillet to oven. Roast until the internal temperature of chicken is 165 degrees F, 20 to 25 minutes. Garnish with parsley.
