Bacon and Cheddar Loaded Potato Salad

Ingredients

Give store-bought potato salad the loaded potato treatment for a speedy side that will be a hit at any cookout.
1/2 (2.1-oz.) box fully cooked bacon
1 (16-oz.) package red bliss potato salad
1 cup shredded sharp Cheddar cheese
1 stalk finely chopped celery
1/4 cup finely chopped red onion
1 (0.66-oz.) package Nature's Promise Organic Chives, finely chopped, divided
Bacon and Cheddar Loaded Potato Salad

Directions

Microwave bacon according to package directions. Allow to cool slightly, then roughly chop or crumble by hand.
In a large bowl, combine bacon, potato salad, cheese, celery, red onion, and half of chives. Stir to combine. Refrigerate until ready to serve. To serve, garnish with remaining chives.
