Smoked Pineapple Sundaes with Rum Sauce

Ingredients

A low-and-slow smoke on the grill infuses fresh pineapple with fantastic flavor. A rum caramel sauce completes the tropical cocktail inspiration.
2 limes
4 tsp. honey
2 Tbsp. olive oil
1 pineapple, cored and cut into 3/4" rings
1/2 cup dark rum
1/4 cup brown sugar
1/2 tsp. salt
Vanilla ice cream, to serve
Smoked Pineapple Sundaes with Rum Sauce

Directions

Set grill to low or smoker to 250 degrees F. Into a small bowl, zest 2 teaspoons and juice 2 tablespoons from limes. Mix in honey and oil until combined. Brush mixture all over pineapple rings.
Place pineapple on grill or in smoker and cook until lightly charred and tender, flipping occasionally, about 35 to 45 minutes.
Meanwhile, in a small saucepan, combine rum, sugar and salt. Bring mixture to a boil, then reduce to a simmer. Cook until sauce is thick enough to coat back of a spoon, stirring occasionally, about 5 to 7 minutes.
Remove smoked pineapple from grill. Serve with a scoop of ice cream and drizzle rum sauce over top of sundaes.
Tip: To enhance smoke flavor using grill: Soak smoking wood chips in water for at least 30 minutes. This prevents them from burning too quickly and produces more smoke. Place soaked wood chips in a foil packet and poke holes in it or place wood chips in a smoke box designated for gas grills. Put the packet directly on the charcoal of a grill or directly on heat source of a gas grill (without a smoke box).
