Quick Bibimbap Rice Bowl

Ingredients

Lunch or dinner is ready in 20 minutes with this Korean-inspired recipe that relies on precooked rice and microwaved bagged spinach.
2 Tbsp. sesame oil, divided
1 lb. 93% lean ground beef
1 tsp. rice vinegar
1 Tbsp. less sodium soy sauce
2 Tbsp. gochujang or Korean chili sauce
3 cloves garlic, minced
4 large eggs

1 (9-oz.) bag microwave in bag spinach
1 1/2 cups bean sprouts
1 English cucumber, thinly sliced
1/4 cup chopped green onions, to serve

Directions

In a 12-inch nonstick skillet, heat 1 tablespoon sesame oil on medium-high. Add the beef and cook 7 to 8 minutes, until browned, stirring and breaking up meat with back of spoon. Season beef with salt and pepper.
Meanwhile, in a small bowl, combine the rice vinegar, soy sauce, gochujang and garlic. Pour over beef and mix until coated. Cook 2 to 3 minutes. Transfer beef to a bowl and set asid
In same pan, heat remaining 1 tablespoon sesame oil on medium-high. Add the eggs and fry 2 to 3 minutes, until yolks are set.
Microwave the rice and spinach according to package directions. To serve, divide rice among 4 bowls. Season with salt and pepper. Top with spinach, bean sprouts and cucumber. Season with salt and pepper. Top with beef and fried eggs. Sprinkle the green onions over top and serve bowls with the kimchi.
